Lausanne, 9 October 2019 - Fabien Pairon and Christian Segui, both Meilleurs Ouvriers de France (MOF) and trainers at EHL Lausanne, have collaborated with the Boucherie du Palais in Carouge (GE) in the production of SÔSS, a dried sausage produced exclusively with Swiss farm pig.
No less than 9 months of research, development and testing have resulted in two products: SÔSS Tradition, a traditional dried sausage with peppercorns, and SÔSS Chorizo, a dried sausage with spicy flavours.
The two MOFs of EHL Lausanne were in charge of developing the product, while Blaise Corminboeuf, the director of the Boucherie du Palais, will take care of its production and marketing.
In the long term, the SÔSS will be available for sale in premium stores in the French-speaking part of Switzerland, and will also be available at the EHL Lausanne boutique.
